The Dealers here in Phoenix were trying to force you to buy an immobiliser by pre-installing it as an option prior to the sale.....they got pissed with me when I refused to pay for it (waay overpriced) as I had not ordered it. Did you buy that 2005 Santa Fe in the US? US Santa Fe's have never had immobilizers - not today and not four years ago.
If the Service Guy is saying it's the immobiliser that is the problem, then why not just get them to disconnect it altogether. There has to be a way to properly program your new remote and key to operate the lock, they are just being dumb about it.
I have a Hyundai Santa Fe 2005 that is not responding to a replaced key that has a code. Our Hyundai garage has suggested we have a new imboliser installed so the key will work, which is going to cost us an additional $1000. Is there something else the garage can try to make the key work?

I have heard multiple things about what to use to top off my power steering fluid on my 2005 Santa fe. I have been advised to use everything from ATF to off the shelf power steering fluid to only the new "special" power steering fluid only sold at Hyundai for $15 a pint. What are you using? I was at my local Hyundai dealer in Minnesota, and they still had about 5 - 2005 Santa Fe's and about 40 - 2006 Santa Fe's. This dealer will not give out the incentives needed to clear these vehicles out before the new 07 model comes out. If they keep this up, they will never sell them when the 07's come!

It inputs the desired temperature,(the temp you key in on the display) then based on the ambient, or outside temperature, verses the interior temperature decides if the heat...AC...or some mix is needed. For at least a few years the Santa Fe 3.5 liter, and maybe the 2.7 by now, have had a "drive by wire" throttle system. This means that the throttle pedal and throttle body are NOT directly connected by a throttle cable and every twitch by your foot isn't transmitted to the engine. Yes, it's max front, min rear. In other words, they put the front seat all the way back. Can I ask why you would purchase an aftermarket warranty? Hyundai offers a 10yr 100k bumper to bumper which should compare favorably to any aftermarket plan.
I just recently purchased a 2005 2.7L FWD GLS Santa Fe without any options (other than cross rails). It's got plenty of power. And I like the small changes they made in the '05 (e.g. grill, taillights, wheel spokes, rear bumper, seat fabric, and instrument cluster). These are all fine vehicles with somewhat minor differences. It's just a matter of which fits your individual needs the best. Outstanding. Thanks again. Personally, I've whittled down my choices to either a Mazda Tribute "S" AWD with the 200 HP engine, or the Santa Fe GLS AWD with the 3.5 engine. There's a new 3.5L V6 available now. It comes with a 5-speed auto trans and a different AWD system. The AWD system may be a step backwards. A shiftronic is still an auto, with a lockup torque converter and all, plus fewer ratios (4 instead of 5). You still lose both fuel efficiency and acceleration as compared to a true manual. My Forester has an aftermarket moonroof, and yes it has a lifetime warranty, but it's not half the size of the one available on new Foresters. I'm green with envy!
